Obituary

Eunice MacKinnon, passed away peacefully on Tuesday, September 10, 2024. Born in Woodstock on April 19, 1942, she was the daughter of the late (Miles and Martha (Stoddard) Underhill.

She was a wonderful wife mom, grandmother, sister, aunt, friend, and the best cook ever. Her kitchen was always filled with pleasant smells of homemade bread, baked beans, casseroles, baked spaghetti pie, Chinese chicken, and many many other dishes made with love. In the summer her kitchen was filled with the fragrances of pickles on the stove (Lady Ashburn, pickled carrots, beets, etc) jams and jellies. At one time we counted over 100 jars of preserves in the basement cold room. Her home was always filled with love and food. If anyone arrived for a visit, they weren't there long before she was preparing coffee, tea and something wonderful to eat.

Eunice worked in many different restaurants including The Maple leaf in Hartland, the Atlantic Inns in Jacksonville, Tim Hortons, and several others in Moncton. Her and husband Hector owned a restaurant just outside of Fredericton. People would line up in the morning to get in and enjoy their Home cooked food. They work together like a well-oiled machine. Although it was gruelling work, we never heard her complain. Even though she worked tirelessly outside the home, her children always had home cooked breakfasts, had the best lunches in the school, and clean clothes to wear.

Another passion of hers were children, and she cared for many of her nieces and nephews.

The family  would like to acknowledge Kenneth E. Spencer Memorial Home for their excellent care.

Eunice will be sadly missed by her husband of 49 years, Hector MacKinnon, daughter Cindy Garon and her children Marc Garon, André Garon, Emmanuel Garon and Luc Garon; son Doug Patterson; daughter Judy Patterson and her children Nicholas Patterson. Patrick Patterson; great grand children Matthew Collette and Emma Collette and their mother Carrie Collette; siblings Elva, Ruth, Roy, Elizabeth, Dale. Mark and Larry. Many nieces and nephews and

Her Aunt Mona McHatten, who will be turning 100 September 24th.

In addition to her parents Eunice was predeceased by a granddaughter Nicole in infancy, brothers Edward, Harold and Clair.

Cremation arrangements have been entrusted to Fergusons Funeral Home, 1657 Mountain Rd. Moncton (506-858-1995). Funeral Service will be held on Saturday, September 21, 2024 at 1:00 PM under the direction of Carleton Funeral Home, 337 Lockhart Mill Road, Jacksonville, NB (506-328-8430).

Reception will follow service  at the Woodstock Legion from 2 to 4PM.
